38 | | S P R I N G 2 0 1 9 for the early Celts, invading Vikings and the Normans. Today, the Old Head Golf Links sits above remarkable sandstone cliffs on one of golf's most amazing sites, surrounded by ocean – as if an island par-3 had been turned into an entire 18-hole affair. Bring plenty of golf balls and have room on your phone to take lots of pictures – you'll need both, and be glad you were prepared! Beyond the Golf Course A post-round activity in Ireland is visiting some of the country's renowned whiskey distilleries. Less smoky and more sweet than its Scottish brethren, Irish whiskeys are among the world's most popular. Dis- tilleries are now capitalizing by offering tours and tasting events – just make sure you hire a driver to make sure you get to your hotel, as Ireland has some of the strictest drunk driving laws in the world. Not far from Ballybunion is Dingle Dis- tillery, which is a great example of a mod- ern take on classic whiskey. Made in three hand-crafted copper pot stills, Dingle's product is considered one of the country's best. Tours are available, where you can see how the whiskey – and Dingle's gin and vodka – are made. Another unique distillery to visit is Kil- beggan, a name that dates to the 1750s that was recently revived for a new generation on the county's east coast. The unique tour provided on site glimpses at what distilling looked like hundreds of years ago, includ- ing the famed waterwheel that once pow- ered the entire operation. Today, new Kilbeggan whiskey flows through ancient pot stills and ferments in vats made of Ore- gon pine – be sure to leave time for a full tour if you find yourself in the area. ■ T h e c o u r s e h a s b e e n h e re f o r a c e n t u r y.
